Louisiana Fish Fry Products of Baton Rouge, La., was founded more than 18 years ago as an offshoot of the retail seafood operation, Tony's Seafood. Today, it is one of the fastest-growing family-owned food manufacturing businesses in Louisiana. Owned by the Pizzolato family, the company produces a line of 30 products, formulated to make Cajun cuisine easy to prepare at home.

The products...
which incorporate original Louisiana Cajun recipes, include specialty sauces, breading, entree and seasoning mixes. Louisiana Fish Fry's line is now marketed in some 40 states. The Pizzolatos achieved initial distribution of the line through in-store product demonstrations in independent food stores and supermarket chains and through participation in regional and national food shows. Today, the sales and marketing department consists of 22 sales professionals, including nine members of the management team.
The rapid growth can be attributed to three factors:
Flavor appeal. Says Cliff Pizzolato, President, "We see our line as universally appealing. While the products are Cajun in nature, we believe they can be enjoyed in households from coast to coast."
Ease of use. "We're offering food that's easy to prepare and reasonable in price. That's what consumers are looking for," Montaldo says. Since ingredients are pre-mixed, consumers get specialty dishes with hours less preparation time than they might need making similar dishes from scratch.
Versatility. Louisiana Fish Fry Products can be used in a variety of ways. For instance, the Shrimp Fry, which has a wheat flour base, can be used on vegetables as well as on shrimp. The products are mixed and packaged a the Baton Rouge facility. "The only way we can be assured of maintaining quality control is to mix them ourselves," says Tony Pizzolato, founder. "To taste test the mixtures before they go to the market, we use ordinary people, not food professionals."
Along with the Crawfish, Crab and Shrimp Boil and Fish Fry mixes, the company offers Cajun Jambalaya Mix, Cajun Etouffee Mix, Cajun Gumbo Mix, Cajun Hushpuppy Mix, Chicken Fry Mix, Chinese Red Pepper, Cajun Seasoning Mix, New Orleans Style Red Beans and Rice, Southwest Chili Mix and Fruit Cobbler Mix. Louisiana Fish Frys condiment items are Hot Sauce, Cocktail Sauce, Tartar Sauce, Cajun Seafood Sauce and Remoulade Sauce. New to the product lineup are Lemon Flavored Seasoned Fish Fry with a corn flour base, New Orleans Style Shrimp Creole, Dirty Rice and Chicken and Fish Bake.
