Bananas Foster

This dish originally created at Brennan's Restaurant in New Orleans in 1951 is now world-famous! Make some in your own kitchen tonight!

INGREDIENTS:

• 4 bananas
• 1/4 lb. butter
• 1 cup brown sugar
• 1/2 tsp. cinnamon
• 1/4 cup banana liqueur
• 1/4 cup dark rum

DIRECTIONS:

1. Cut bananas in half lenghtwise then dice into 1 inch cubes.
2. In a heavy sauce pan, melt butter over medium high heat.
3. Add sugar and cinnamon and whisk until sugar is melted and bubbly.
4. Stir in banana liqueur and diced bananas.
5. Saute until softened.
6. Remove pan from flame.
7. Add rum, then return pan to flame, be careful, rum will ignite.
8. Stir constantly and when flames subside, remove pan from heat.
9. Serve over vanilla ice cream or cheesecake.
